Коровье молоко изобилует казеином, придающим створоженным сгусткам белый цвет, и бедно сывороткой, протеином, который после свертывания молока остается в водянистой части. Грудное молоко человека обладает противоположным составом: содержит мало казеина и много сыворотки.5
